Tuesday night, I made a meal which Tommy called “one of his all-time favorites.” This is a big deal, so I thought I’d share it with you! How does a Primal Rice Bowls Recipe sound to you?
Most of it was pretty standard - a burrito bowl! But what he was really excited about was the rice, so I will share how to make that!
Here’s a little preview of the meal!
Doesn’t that look delicious? Since most of the items are just the item chopped up, I won’t explain all of that. But the rice - here goes!
In your food processor, “rice” your cauliflower. If you’ve been following me a while, you’ve seen how! Do the same to half a white onion, and mix it all together. When you’re done with cooking your chorizo, leave the grease in the pan, and add some Kerrygold butter. Add a little diced chili and some tomato paste, as well as garlic and salt (or garlic salt!) and any other seasonings that intrigue you! Once the butter is melted and it’s all mixed together, put the “rice” (cauliflower and half diced onion) into the mix and cook it on low until the rice is soft and reddish yellow, like this:
Then, the options are endless, both as far as toppings/accompaniments that can go with it as well as how you want to serve it! I may or may not have been eating it with chips as a dip (without the greens) while I wrote this blog!
Here’s the burrito bowl/salad in all its glory!
You may have noticed in my teaser video that I talked about El Salvadoran crema/sour cream. It’s delicious, and something Tommy picked up at the Milk Pail, a local store! If you don’t have that, I often recommend Greek Yogurt (or Icelandic) as a substitute for sour cream, with extra protein! Have you ever tried that!
If not, and if you’re especially intrigued by the Icelandic yogurt, I have a treat for you - a giveaway to a 30-Day Supply of Siggi’s Yogurt!
Obviously, I recommend getting the plain, whole yogurt (4% milk fat), because as you know, I am all about the fat, and not a fan of sugar… And that’s the idea behind Siggi’s - simple ingredients and minimal sugar!
Another way that I love to eat it (aside from plain - seriously!), is to use it to mix chocolate Shakeology into. It makes an insanely healthy chocolate mousse!
Here’s how you can enter!
30-Day Supply of Siggi’s Yogurt!
Big thanks to Siggi’s for sponsoring the giveaway!
Just a reminder: My next challenge group starts this Monday, and is focused on Shakeology! It will also include general fitness and nutrition for a week for anyone who needs that plus support, but the reason it is called “Shake Up July” is because we are going to challenge ourselves to drink Shakeology every day for a week. And yes, there will be prizes! If you don’t already have a Shakeology home direct subscription, or a supply of it, you can get the taste sampler!
Click here to join the group, here for the taste sampler with all the flavors, and here for the vegan sampler!
Blogs that are coming up next: Why I’m not sweating for the wedding (and what I am doing instead), and my recap of Blogfest!
So, what’s your favorite healthy meal?

Now I just need to get a food processor to try this!
Yes, it helps so much! I use it for cauliflower rice so often!
my favorite healthy meal is greek food!!
Oooh, like what?! I randomly crave gyro salads quite often.
My favorite healthy meal is a stir fry with tons of veggies and tofu, and brown rice!
I wish I liked stir fry more! I can do without tofu. But glad you’re getting your veggies in! 👍🏽
Would love to try this! My favorite was the cauliflower crust pizza 🙂
Any kind of pizza has my attention! I have never gotten my cauliflower crust to look good or stay together, but that doesn’t stop it from being delicious! 😉
Riced cauliflower is one of my new favorites !!!!! This looks delicious!

My favorite healthy meal is a homemade omelet!
Good choice! My omelettes become scramblers 100% of the time, but they are still tasty and healthy, especially with CHEESE! <3
Roasted veggies!
Great choice!
I like anything with tomatoes and corn in the summer.
Sounds delicious!
My favorite healthy meal is Greek yogurt with fresh berries on top
This could be perfect for you then!
Yum I def need to try cauliflower rice!!
It is so versatile! If you keep it processing, it can be cauliflower mash, too!
